I have to say I was intrigued when I saw this recipe on  Stacey Snacks and wondered how they would taste.  Finger foods are great for snacking and a great way to get kids to eat their vegetables, too.  I decided to give it a go and make them as a side dish with my dinner.  Now, if you are not one to get your hands dirty with your food prep, then this isn’t a recipe for you.  On the other hand, just slip on a pair of those food gloves and go at it, you won’t be disappointed that you did!  They were easy to prepare and baked up in the oven really well.  Using the parchment paper not only made it non-stick (easier to turn the patties) but easy on clean-up. There is cheese in there too…who can resist cheese?  I’m thinking the next time I make these cute broccoli bites (yes, there will be a next time,) I am going to have to make extra and freeze them.  Pop them in the oven for a few minutes to warm and crisp up and ya got a snack!  The recipe does say to enjoy them cooled, but I found they were great hot as well.
 
Ingredients:
 

16 oz. package of frozen chopped broccoli, thawed and drained of liquid (I used fresh steamed broccoli)
1 1/2 cup of grated cheddar cheese
3 eggs
salt & pepper
1 cup of seasoned Italian breadcrumbs*

Instructions:

 
 
Mix all the ingredients together in a large bowl.

With your hands, form small patties and lay on a parchment lined baking sheet.

Bake at 375F for 25 minutes, turning the patties after the first 15 minutes.**

 
Let cool and enjoy!
 
A couple of notes:
 
* I didn’t have seasoned bread crumbs on hand so I used Panko bread crumbs and enough Italian seasoning to taste.
 
** My patties were slightly bigger than those from the recipe so they needed a bit more cooking time to brown up nicely.
