Sunday Spotlight #5 – Vegetable Chow Mein

It’s been a minute since the last Sunday Spotlight here on the blog due to, well, life got in the way.  The Spotlight is back with a great new recipe and blog to feature.  Vivian, from Dish Ditty Recipes, has a mixture of cuisines
on her site ranging from Chinese, Polish, Irish, and American.  I think that is what drew me in to her site in the first place.  Her recipes not only come from herself but from family as well.  She gives a personal touch to nearly all of her recipes with family stories and that personal touch makes the dishes all the better.  After viewing nearly all of her recipes (saving quite a few to try later), I chose her Vegetable Chow Mein recipe to feature.  It would go well with my Sweet and Sour Chicken that I was planning to make for dinner.  One of the things that I like best about Vivian’s site is that she goes that extra mile to explain how to use certain food items that we may not be very familiar with and she provides alternatives with instructions, too. This did indeed come in handy, as I couldn’t find the fresh steamed chow mein noodles in my grocer’s refrigerated section so I used the dried form. With her detailed instructions, I was able to substitute the noodles easily.  I also made one other change which was to reduce the sesame oil to one tablespoon as I knew from previous experiences, for my family, it would be overpowering.  Other than that, I followed the recipe to the letter.  This dish didn’t fail in taste or looks, it was wonderful and definitely will be a part of our menus in the future.
