These easy Chicken Lasagna Roll Ups are a hearty dinner filled with a chicken and cheese filling and covered with a delicious marinara sauce. A dinner that everyone will enjoy!

Growing up lasagna was a meal that was reserved for Sunday dinner because my dad would take store-bought sauce, doctor it up, and let it simmer for a couple of hours before boiling the lasagna noodles; then assemble the dish and baking for an hour. Well worth all of that labor of love! So is the time it takes to make these Chicken Lasagna Roll Ups!

Chicken Lasagna Roll Ups are filled with a creamy cheese filling similar to that in a traditional lasagna and instead of using cooked ground beef, I’ve used cooked shredded chicken with the cheese filling. Once I “rolled up” the lasagna noodles, I covered them with my favorite marinara sauce and baked. The entire family loved this recipe and asks for it on a regular basis.

Chicken Lasagna Rolls

Chicken lasagna rolls for me are the easy way to change up the classic recipe when not only time is limited but when we want something different. Chicken is a staple in our dinner menus and quite frankly, can get old to make the same ways. Changing it up with this twist on a lasagna recipe deliciously gives us a new meal to enjoy.

The cheese filling is comprised of feta, ricotta, and Parmesan cheeses along with a little mind for a binder. The shredded chicken can be freshly cooked or leftover from another meal. I’ve also used a rotisserie chicken from the deli area of the grocery store.

For the marinara sauce, I just doctor up our favorite jar of sauce, or sometimes I will go all out if I have time and simmer a homemade marinara for this recipe. Then bake and enjoy! Your whole family will love it!

Can I use the oven ready lasagna noodles for this recipe?

No, the oven-ready lasagna noodles will not work for this recipe since we are cooking the noodles al dente then placing the filling on them and rolling them up to bake.

Can I freeze lasagna roll ups?

Yes, you can easily freeze chicken lasagna roll-ups. Two ways to freeze this recipe.

  1. Prepare as directed in the directions for the recipe. Then line a baking sheet with wax paper, and place each roll up on the baking sheet with a bit of space between them. Flash freeze until frozen, then place lasagna rolls in a freezer-safe and airtight container. To bake, remove from freezer, thaw, and then place in a baking dish, cover with sauce, cover with foil, and bake in a 350-degree oven until hot.
  2. Prepare and bake as directed in the recipe. Cool completely and wrap rolls in aluminum foil and then in a freezer-safe container. To reheat, thaw, and microwave till hot or heat in a 350-degree oven until hot.

Ingredients:

  • 8 lasagna noodles, cooked and drained
  • 3 cups shredded cooked chicken
  • 1/4 cup milk
  • 1 cup Ricotta cheese
  • 1/4 cup crumbled feta cheese
  • 1/4 cup grated Parmesan cheese
  • 1 jar (24 ounces) of marinara or spaghetti sauce
  • pepper to taste

How to Make Easy Chicken Lasagna Roll Ups

Step 1

Cook lasagna noodles according to package directions for al dente. Drain and lay out in a single layer on wax paper to cool.

Spread 1 cup of spaghetti sauce on the bottom of a casserole dish. I used a 13×9-inch baking dish.

Step 3

In a medium bowl, combine chicken, Feta cheese, Ricotta cheese, Parmesan cheese, milk, and pepper. Mix until combined.

Spread 1/2 cup of the chicken and ricotta mixture on each cooked lasagna noodle.

Then starting at one end, roll up the noodles. Arrange lasagna rolls, seam side down in sauce in the baking dish.

Pour the remaining sauce over lasagna noodle roll ups.

Cover with foil and bake for 30 minutes or until hot. Remove foil and top with more Parmesan Cheese and serve with garlic bread and a side salad if desired.
