Happy Mother’s Day to all the Mothers out there! Hope you have a most wonderful day and get treated to a dinner out or have someone make you dinner for a change! We most likely will do a very late lunch/early dinner out to avoid the long lines waiting for tables.
If you are lucky enough to have someone else do the cooking, suggest this out-of-this-world Barbecue Pot Roast from The Gunny Sack. From the moment I saw the recipe, I was hooked on making it. First of all, Barbecue, ’nuff said about that. Second, two ingredients. Easy, simple, and delicious. I used our favorite BBQ sauce and was totally impressed with the moist, tender and flavorful results. I was a little worried about clean up being as the roast is soaking up all the saucy goodness for three hours in the oven but my non-stick Dutch oven did me proud. You know a meal is great when there are NO leftovers!
Definitely check out this recipe and the many others Tonia has on her fabulous site. Start your day off with some of her Iced Coffee (or enjoy it throughout the day) with a Pumpkin Spice Scone. The scones really intrigue me as she uses not only all the spices you would find in pumpkin pie but also Pumpkin Spice Coffee Creamer! I think her Chicken Fajita Southwest Salad would make a great lunch or dinner. It’s filled with all things healthy with a salsa-sour cream dressing. I make pizza bites for snacks from time to time and now that I see Tonia’s recipe for Bacon Cheeseburger Pizza Balls, I’m going to have to make those. Bacon? Cheese? It’s a winner right there. How often do you crave just one brownie? Yeah, I know, you can’t just crave ONE brownie but if you feel the need to control that urge make her 60 Second Brownie for One. I wonder just how many “for one” brownies you can get from the box? Tonia’s site has kept me busy looking at her recipes and I think you should give them a look as well!
