Peanut Butter Pudding Cookies

 

 

Summer vacation has come to an end for those of us in my family that are in college, including myself. My youngest daughter headed back to college today with food for her freezer and a container of cookies that she requested. She was craving peanut butter cookies with white chocolate chips; so I set out to make that happen. I know she loves the Pudding Cookies I make so I thought why not add pudding to peanut butter batter. I love how the pudding mix makes the cookies a bit thicker, softer and chewier. I also wanted something just a bit different in terms of a recipe so this is what I found and they were a big hit!

Ingredients:

3/4 cup butter, softened
1/2 cup peanut butter
1/2 cup sugar
1/2 cup brown sugar
2 eggs
1 tbsp honey
1 tsp vanilla
2 1/4 cups flour
1 tsp baking soda
1/2 tsp salt
1 (3.4 ounce) box of instant vanilla pudding
1 cup white chips
1 cup reeses pieces

Instructions:

 
Preheat oven to 350 degrees

In a mixing bowl combine the flour, baking soda, salt, and pudding mix and set aside.

 
In a large mixing bowl of a stand mixer cream butter, peanut butter, and sugars until fluffy.
 
Add the eggs, one at a time – beating well after each.
 
Add the vanilla, and honey and combine well.
 
Slowly add the dry ingredients to the batter.
 
Stir in the white chocolate chips and reeses pieces by hand.
 
Drop by tablespoon onto a baking sheet, leaving 2 inches in between each cookie. Bake for 10 – 12 minutes. Cool on pan for a couple of minutes before removing to a wire rack.
