This Easy Red, White, and Blue Giant Cookie Cake is easily made with a cake mix and loaded with chocolate chips, and topped with festive sprinkles. The perfect dessert to celebrate any patriotic holiday!

Over the years, this Easy Red, White, and Blue Giant Cookie Cake recipe has shown up for several patriotic holidays, like Memorial Day or the 4th of July. The recipe came to me from a dear friend as she had made it for her daughter’s birthday one year.

It’s the easiest and quickest cookie cake I’ve ever baked and you can decorate it for any holiday or occasion.  In fact, my girls have requested this cookie cake in place of the traditional cake for their birthdays several times. Not even going to lie – I’ve made this for my own birthday in the past.

Cake mixes are the best when it comes to using them to make other baked goods like cookies or donuts. One of my favorite cookies, Double Chocolate Mint, starts with a cake mix. Easy recipes are always great when you need a last-minute dessert.

Making this jumbo cookie cake is the perfect solution to what to bring to your July 4th celebrations, BBQs, and summer gatherings.

When deciding on what cake mix to you for this recipe, you pretty much have a blank canvas. I do not suggest you use any cake mix that has “pudding in the mix”. For some reason, it doesn’t work out as well. That being said, I stick to yellow or white. I have made this with chocolate and lemon with delicious results.

You won’t be following the box instructions for this cookie cake recipe. Instead, you will be just the dry mix with the addition of canola (or vegetable) oil, chocolate chips, sprinkles (or jimmies), and vanilla extract. The batter will be very thick and somewhat sticky – this is normal, remember your making cookie dough with it.

You’ll note that there is no egg in this recipe, and some cookie cake mix recipes do call for one. I have never used it in this recipe and it comes out amazing every time.

Once baked and cooled, the big cookie is your blank canvas to decorate. For this patriotic cookie cake, I choose to pipe canned frosting around the edges and sprinkle the cake the frosting with more red, white, and blue sprinkles.

Equipment

  • 12-inch round pizza pan (non stick)
  • mixing bowl
  • wooden spoon
  • offset spatula
  • piping bag (Ziploc bag with a small part of the corner snipped off)

Gather your ingredients

  • 1 boxed yellow cake mix – DO NOT use cake mixes with pudding in the mix
  • 2/3 cup oil
  • 2 teaspoons vanilla
  • 1/3 cup of chocolate chips
  • 1 container of white frosting
  • red white, and blue sprinkles (or jimmies)

How to Make this Giant Red, White, and Blue Cookie Cake

Step 1

Preheat oven to 350 degrees.

Step 2

In a large bowl. combine the cake mix, oil, and vanilla. Mix well with a wooden spoon.

Step 3

Stir in chocolate chips. The dough will be thick and a bit sticky. You may even want to use your hands to mix in the chocolate chips.

Step 4

Mix in the sprinkles – again you may want to use your hands.

Step 5

Spread the cookie dough evenly onto the pizza pan. I find it’s easier to pat it out with my hands, but an offset spatula works too as does a piece of parchment paper.

Step 6

Bake at 350 degrees for 15 – 17 minutes, or until lightly golden brown. Allow the cookie cake to cool completely ON THE PAN before decorating it with frosting and sprinkles.

Step 7

Pipe frosting along the using a piping bag and then immediately add the sprinkles to the frosting.

Note

**Please note that while you may feel the need to remove the cookie cake from the pan to cool or to serve, resist this urge. Sometimes the cake may crack when doing so.

I allow it to cool on the pan, decorate, cut, and serve from it. The slices do not crack when removed this way.

Tips, Tricks, and FAQs

  • Do not use a cake mix labeled “pudding in the mix”.
  • You do not need the cake mix instructions for this recipe. The cake mix just serves as the dry ingredients and you will add the oil, vanilla, and chocolate chips plus the sprinkles
  • You are not limited to yellow cake mix. Try another flavor like French vanilla, lemon, chocolate, or even white.
  • If you’re using a lemon cake mix, omit the vanilla and add lemon extract.
  • Instead of chocolate chips, add red, white, and blue M&M candies, white chocolate chips, or even chopped nuts.
  • Turn this cookie cake into a fruit pizza by adding a thin layer of the frosting then top with fresh berries or your favorite fresh fruit. I like fresh strawberries and blueberries on this.
  • Cream cheese frosting is quite tasty on this cookie cake.
  • You can use a small jelly roll pan to make this cookie cake in place of the pizza pan.
  • For best results, do not remove the cookie cake from the pizza pan once out of the oven. It could crack as you do. I suggest allowing it to cool completely on the pan, decorating it there, and serving from it. The slices won’t crack this way.
  • To store the patriotic cookie cake, wrap plastic wrap over the pan.
