Cheesy Scalloped Potatoes

It seems like I have tried every recipe known to man for this cheesy potato side dish and yet have found a recipe that I actually want to make again.  That is, until now. I do believe I found a “base” recipe for scalloped potatoes that is worthy of the title “Make it again.”  I will say that the recipe from Family Feedbag did take a bit longer to cook than the hour listed but I didn’t use the 9×9 pan that was listed in the recipe. Instead, I used a round casserole dish, it was pretty large though, so not sure why it took 90 minutes to cook.  It was worth the wait, even though the family began to revolt because dinner was taking forever.  I used a potato slicer so the slices were paper-thin but you could easily spend the time slicing them by hand.

I also make three changes to the recipe:

  • instead of using the 1 1/2 cups of diced onion, I used 1 cup thinly sliced green onions which I did saute in the butter with the garlic before adding the flour and milk.
  • I omitted the chives since I felt it would overpower the “onion” taste with the green onions
  • I added pepper to each layer of potato.

Other than that, I followed the recipe and next time, I will use a more shallow baking dish so that it won’t take “forever” to cook.  Because it did take that long to cook, I failed to get pictures so the one you see is from the website I got the recipe from.
