Homemade Taco Mac
  • 1 pound lean ground beef
  • 1 cup onion, finely diced
  • 1 jalapeno pepper, seeded, and diced (optional)
  • 3 tbsp Homemade Taco Seasoning
  • 1 cup frozen corn kernels
  • 2 cups water
  • 1 cup salsa
  • 1 can Ro-tel tomatoes (undrained)
  • 2 cups elbow macaroni (uncooked)
  • 1½ cups cheddar cheese, shredded
  1. In a large skillet over medium high heat, brown ground beef. When ground beef is nearly done, add diced onion and jalapeno peppers. Cook until onions are soft.
  2. Add taco seasoning stirring to coat.
  3. Add corn kernels, water, salsa, tomatoes and pasta. Stir until well combined.
  4. Bring to a boil. Cover and reduce heat. Cook for 8-10 minutes, until the pasta is fully cooked.
  5. Stir in cheese until melted.
  6. Remove from heat and let stand for 2-3 minutes before serving.
  7. Top with your favorite taco topping such as diced tomatoes and sliced green onions.
