Easy Tator Tot Breakfast Bake
  • 1 lb. breakfast hot sausage (or use regualar flavored)
  • 8 eggs
  • ¼ cup milk
  • 3 green onions, sliced (save some for garnish)
  • 6 to 8 oz. sharp white cheddar, shredded (about two cups)
  • ½ of a 32 oz bag of frozen Tator Tots
  1. Preheat oven to 400 degrees.
  2. Spray a 13 x 9 baking dish with non-stick spray.
  3. Heat a skillet over medium-high heat and brown sausage until cooked. Drain.
  4. In a small bowl, whisk eggs and milk.
  5. In prepared baking dish, layer sausage, eggs, one cup of shredded cheese, and the green onions (don't forget to save some for garnish).
  6. Top with tator tots.
  7. Bake for 25 to 30 minutes or until tator tots are browned and crispy.
  8. Remove from oven, top with remaining cheese and green onions.
  9. If desired, add salt and pepper to taste.
