Pudding Cookies
  • 4 - 4.5 cups of flour
  • 2 tsp baking powder
  • 2 tsp salt
  • 4 sticks softened unsalted butter
  • 1½ cups light brown sugar
  • ½ cup sugar
  • 1 large box Instant Vanilla pudding mix
  • 2 tsp vanilla
  • 4 large eggs
  • 2 12oz bags semi sweet chocolate chips
  1. Preheat oven to 375 degrees.
  2. In a medium bowl, combine the dry ingredients (not the chocolate chips). Set aside.
  3. In the bowl of a stand mixer, cream together the butters, pudding mix, and both sugars until creamy. Add the eggs one at a time and beat after each. Then add the vanilla and mix until combined.
  4. Gradually add the dry ingredients, beating until combined after each addition.
  5. By hand, stir in the chocolate chips.
  6. Drop by 1½ tablespoons scoops on to baking sheet.
  7. Bake at 375 degrees 9 - 11 minutes or until golden brown.
This is the basic recipe. Add whatever nuts or use white chocolate chips. I don't use 4.5 cups of flour. I stop at 4 cups and I don't use 2 whole bags of the chips...usually one is enough for us. I add one cup of macademia nuts too.
