Slow Cooked Beef Tips with Gravy

Have you ever just had a craving for a meal you had at a restaurant but didn’t want to go out to get it? Of course you have, we all have had that moment where you just need “that” meal. We have a local restaurant that makes the best beef tips with gravy that I have ever had. They serve them over creamy mashed potatoes with the most delicious caramelized onions. It’s a treat to have this meal as it isn’t the most low in calorie meal out there. Thanks to Lauren’s Latest site I can make this at home in my pj’s if I wanted to, anytime at all. Of course, it’s still rich in calories so it will be a treat to make and eat but I can do it in my pj’s, if I wanted to. Oh, did I mention this version is slow cooked in the oven or the crockpot? Yep, it is!

I’m going to give you a tip for making this meal a success that you must follow if you choose to make it. It’s most important to follow the instructions completely or you will have a big fail on your hands. How do I know this? Because I didn’t follow her simple steps, I went out on my own on just ONE step. Ha! It was the wrong step to skip. Lauren’s recipe calls for cooking the onions for 3 minutes and then adding the chunks of beef to brown up before adding the rest of the ingredients to the Dutch oven to finish cooking in the oven or the crockpot. I followed her instructions with the onions but skipped the step in browning the meat (yes, I know this is where you seal in the flavors) and I put it all in the crockpot. Turned it on low and went about my day. I checked it later to find it so greasy looking and tasting and knew immediately I had made a mistake in NOT browning the meat. I let it go thinking maybe when I add the flour to thicken it up it would be fine. So, move ahead a couple of hours, I tasted the meat and it was so bland and the gravy was still greasy. I told my husband we’re going out and we did. On the way home that evening, I asked him to stop at the grocery store where I promptly got more beef. Next day, I made this wonderful meal again and it was a total success when you don’t skip that important instruction of browning the beef. I didn’t find Tri Tips as the recipe calls for but I used beef stew chunks and it turned out perfect.

Ingredients:

3 tablespoons olive oil
1 medium yellow onion, diced
3 cloves garlic, roughly chopped
2 lbs. tri tip pieces {or a 2 lb. tri tip roast, cut into large pieces}
salt & pepper, to taste
1-10.5 oz. can beef consomme
1 can water
2 bay leaves
3/4 teaspoon dried thyme leaves
3 tablespoons softened butter
3 tablespoons flour
more water, if needed
Mashed Potatoes
