This Baked Oatmeal with Blueberries is naturally sweetened with real ingredients and loaded with fresh fruit. Prepared the night before and baked in the morning, this healthy and delicious breakfast will be loved by all.
Gather your ingredients and a large mixing bowl. Add the oats, milk, applesauce, eggs, maple syrup, vanilla extract, walnuts, cinnamon, baking powder, and salt in the large bowl. Mix well with a wooden spoon.
Spray a 7″ x 11″ baking dish with nonstick cooking spray. Spread half of the oatmeal mixture in the casserole dish (a little more than 1½ cups). Top that with about ¾ of the blueberries.
To bake the oatmeal: Uncover and allow the dish to come to room temperature while the oven is preheating (350 degrees). Bake uncovered for about 30 – 35 minutes, or until the top is golden brown. Allow it to rest for five or so minutes before you slice and enjoy.
