Homemade Soft Pretzel Bites
with Cheese Dip

Ingredients
For the pretzel dough
–warm water
–active dry yeast
–unsalted butter
–flour
–salt
–water
–baking soda
Egg Wash and Topping
–egg
–water
–table salt or coarse salt
For the cheese dip
–Velveeta cheese
– Rotel tomatoes

Step 1:
Combine 1 cup water, yeast, and melted butter in a bowl and mix, until combined. Allow the yeast minute to sit for 5 minutes.

Add 1 1/2 teaspoons salt and flour to bowl, and mix on low until combined. Then mix on medium speed, and knead for 4 minutes, until the dough is smooth.

Remove dough from bowl, form into a ball. In a large greased mixing bowl add the dough and coat with oil. Cover and set in a warm place for 1 hour to allow the dough to rise and double in size.

Once the dough is ready, heat oven to 425, and prepare baking sheet.
Step 5:
Bring 8 cups of water to a boil. Slowly and carefully add baking soda. Be careful or the water may boil over.

Cut the dough into 8 equal pieces.

Roll each piece into a 12" rope, then using a sharp knife, cut each rope into 8 pieces.

Carefully add the pieces of dough into the pot of boiling water. Boil for about 30 seconds. Remove with a spoon, and place onto baking sheet, spacing them apart slightly.

Step 9:
Add egg and 1 teaspoon of water into a bowl, beat, then brush the egg wash over the tops of the pretzel bites. Salt with either table or coarse salt.
Step 10:
Transfer to baking sheet and bake in oven for 15 minutes. Flipping halfway through, until golden brown. Remove and cool for 5-10 minutes.

Step 11:
Add Velveeta and Rotel to a microwave-safe bowl and heat in increments, stirring between each session, until the cheese is melted.
