Spicy Sausage and Beef Rigatoni with Fire-Roasted Tomatoes is an easy meal that is ready in just 30 minutes. The flavors in the meat sauce can’t be beat with the spicy sausage, fire-roasted tomatoes, and red chili pepper served over rigatoni pasta. Perfect for a weeknight meal!
-Red Roasted Peppers
-Spicy Breakfast Sausage
-Fresno Chili Pepper
-Salt & Pepper
Heat olive oil, add sausage, beef and as the meat cooks crumble them together. Drain grease and return meat to the pot.
Stir in onion, garlic, and hot chili pepper until softened.
Season with salt & pepper. Add in tomato paste, beef stock, and let liquid reduce.
Add tomatoes, beef stock, and roasted red bell peppers. Simmer to thicken.
While sauce is simmering, cook pasta. Save some pasta water for later.
Drain pasta and add to sauce with the pasta water. Toss to get everything coated.
Serve with Parmesan cheese and garnish with parsley.
