Lightened Up Broccoli Salad (Paleo)

This Broccoli Salad recipe is a lightened-up version of the classic salad. A tasty side dish or a light lunch, this salad will be a winner plus it's Paleo-friendly and gluten-free.

Ingredients

  • 4 cups fresh broccoli florets
  • 1/4 cup sunflower seeds
  • 1/4 cup dried cranberries
  • ¼ cup diced red onion
  • 1/4 cup Paleo-approved mayonnaise
  • 1 tbsp apple cider vinegar
  • salt and pepper Instructions

Instructions

  • Place the broccoli, sunflower seeds, and cranberries in a large bowl.
  • Combine the mayo, vinegar, and salt and pepper in a small bowl and mix well.
  • Pour the dressing over the salad and toss well.
  • Chill at least an hour before serving.

Notes

You can replace the Paleo-approved mayo with mayo of your choice if you’re not doing Paleo.
