Equipment

  • metal or wooden skewers
  • saucepan
  • grill

Ingredients

  • cup unsweetened pineapple juice
  • ½ cup ketchup
  • 4 tablespoons low-sodium soy sauce
  • 2 cloves garlic, minced
  • 2 tablespoons light brown sugar
  • 1 ham steak ( or leftover ham chunks), cut into 1-inch pieces
  • 1 red onion, cut into 1-inch pieces
  • 2 bell peppers (I used red and green), cut into 1-inch pieces
  • ½ of a fresh pineapple, peeled and cored, cut into 1-inch pieces

Instructions

  • Remember, if you’re using wooden skewers, to soak them for 30 minutes BEFORE assembling and grilling the kabobs. This will keep the wooden skewers from burning and catching your food on fire. I like to use metal skewers as I have a tendency to forget to soak the wooden ones.
  • Make the pineapple grilling sauce by whisking together the pineapple juice, ketchup, soy sauce, garlic cloves and brown sugar in small saucepan. Bring to a boil, then reduce heat to low and simmer for at least about 10 minutes. Then allow to cool before use (about 10 minutes).
  • While the sauce is cooling, assemble the skewers. There is really no wrong way to assemble the skewers. I like to alternate the ingredients on the skewers and place them on a sheet pan.  Some people like to make all meat skewers and all veggie ones.
  • Preheat your grill to medium-high. Once the kabobs are assembled, brush them with half of the cooled sauce, turning each skewer over to get all sides. Set the remaining sauce aside.
  • Place skewers on grill and use the drippings in the pan to brush over the skewers once more. Grill each side of the skewers for about 5 minutes, or until all ingredients have been heated through and have nice grill marks. As you are turning the kabobs, brush more of the sauce over them.
Use any remaining sauce to serve with the skewers. Also, if you want to grill pineapple slices, place them on the grill with the kabobs. Brush some of the sauce over them and heat on both sides a few minutes each.
  • Serve over a bed of white rice, or add your favorite side dish.
