Double Chocolate Mint Cake Mix Cookies

Double Chocolate Mint Cake Mix Cookies are a perfect and easy decadent cookie for your holiday cookie trays. Easily made with a shortcut using a cake mix.

Ingredients

  • 1 box chocolate cake mix
  • 1/4 cup unsweetened cocoa powder
  • 1 cup semi sweet chocolate chips
  • 3/4 cup mint chocolate pieces
  • 1/2 cup (1 stick) unsalted butter, melted
  • 2 eggs

Instructions

  • Preheat oven to 375 degrees. Spray baking sheet with nonstick spray. Set aside.
  • In a large mixing bowl add the cake mix (just the dry cake mix), 1/4 cup unsweetened cocoa powder, 1 cup chocolate chips, 3/4 cup mint chocolate pieces. Give it all a stir to combine.
  • Add the 1/2 cup melted butter and 2 eggs. Using a wooden spoon, mix until combined.
  • Scoop by rounded tablespoons onto prepared baking sheet. Bake 7 - 8 minutes or until edges are set and the tops have started to crack.
  • Remove from oven and cool a few minutes before removing cookies to cool completely on wire rack.
