Ingredients

  • 1 3/4 cups flour
  • 3/4 cup Dutch process unsweetened cocoa powder
  • 1 teaspoon baking soda
  • 1/4 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 cup unsalted butter, softened
  • 1 1/2 cups sugar
  • 2 eggs
  • 1 teaspoon vanilla extract
  • extra sugar for rolling the dough balls in

Instructions

  • Preheat oven to 350 degrees. Line baking sheets with parchment paper or silicone baking mats. Set aside.
  • In a medium bowl, combine the dry ingredients: flour, cocoa powder, baking soda, baking powder, and salt. Set aside.
  • In a large mixing bowl of a stand mixer, cream the butter and sugar together until light and fluffy. Add the eggs one at a time and mix until well combined after each addition. Then add the vanilla extract and mix until combined.
  • Add the dry ingredients and mix until the dough is well combined. The dough will be thick. Be sure to not overmix the dough. Use a wooden spoon to help it come together if it gets too thick.
  • Using a 1 1/2 tablespoon sized cookie scoop, place dough balls of cookie dough on prepared baking sheet.
  • Roll each ball in the sugar to coat. Set the balls on the baking sheet. Press down on the tops of the balls slightly.
  • Bake cookies for 8-10 minutes; be sure not to overbake. The cookies will be a little puffy when you take them out of the oven but will fall a little as they cool. Remove from the oven and allow to cool on baking sheets for 4-5 minutes before transferring to a wire rack to cool completely.
