Easy Baked Bruschetta Chicken

Ingredients

  • 4 chicken breasts
  • 2 tablespoons FlavorGod Zesty Italian seasoning
  • 3/4 cup of shredded mozzarella cheese

Bruschetta ingredients

  • 1 ½ cups grape tomatoes, halved
  • 3 cloves garlic, minced
  • ½ small red onion, diced
  • 1 teaspoon balsamic vinegar
  • 1 teaspoon olive oil
  • ½ cup chopped fresh basil
  • ½ teaspoon salt

Instructions

  • In a medium mixing bowl, combine the fresh tomatoes, minced garlic, diced red onion, balsamic vinegar, olive oil, basil, and salt. Mix until combined. Set aside.
  • Preheat the oven to 425 degrees F. Spray a 13×9 inch baking pan with nonstick spray.
  • Season both sides of the chicken breasts with zesty Italian seasoning. Place chicken in the baking pan.
  • Bake chicken in the oven for 25-30 minutes, or until chicken is done (reaches 165 degrees when tested with a meat thermometer).
  • Remove chicken from the oven. On top of the chicken breasts add the shredded cheese. Top each chicken breast with one-fourth of the bruschetta mixture. Place chicken back in the oven for 5 minutes, or until cheese is melted.
  • Remove the baking dish from the oven and serve.

Notes

  • Substitute halved cherry tomatoes or dice about 4-6 Roma Tomatoes in place of the grape tomatoes.
  • Use boneless, skinless chicken thighs in place of the breasts. You may need to increase the cooking time by a few minutes. Check at the 25-30 minute mark. The internal temperature needs to be 165 degrees.
  • Italian seasoning can be used in place of the zesty Italian.
    Slices of mozzarella cheese can be used in place of shredded cheese.
