Hot Chocolate Cookie

Hot Chocolate Cookies are made with your favorite hot chocolate mix and marshamllow bits right in the dough. Delicious on their own and when serving with a mug of hot cocoa!

Ingredients

  • 1 cup unsalted butter, softened
  • 1 cup white granulated sugar
  • cup light brown sugar
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 3 ¼ cups flour
  • 4 packages (or ¾ cup) hot chocolate mix (do not use sugar-free)
  • 1 teaspoon salt
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1 cup semi-sweet chocolate chips
  • 1 cup Mallow Bits (do not use mini marshmallows)

Instructions

  • In a large mixing bowl of a stand mixer, beat butter and both sugars until light and fluffy. Add in the eggs and vanilla extract and combine well.
  • In a medium bowl, combine your dry ingredients: flour, hot chocolate mix, salt, baking soda, and baking powder.
  • Gradually add the dry ingredients to the butter and sugar mixture. Mix well. Stir in chocolate chips and Mallow Bits.
  • Cover the bowl and chill for 30 minutes and up to 24 hours. (I chilled mine for an hour).
  • Preheat oven to 350 degrees F. Line cookie sheets with parchment paper or a silicone baking mat.
  • Using a cookie scoop, drop a 1 1/2 tablespoon of dough onto prepared baking sheets. Bake for 9 - 11 minutes, or until the edges are lightly browned.
  • Remove from oven and let cookies cool on baking sheet for 5 minutes before removing and cooling completely on wire racks.
