Hot Chocolate Cookie
Hot Chocolate Cookies are made with your favorite hot chocolate mix and marshamllow bits right in the dough. Delicious on their own and when serving with a mug of hot cocoa!

- 1 cup unsalted butter, softened
- 1 cup white granulated sugar
- ⅖ cup light brown sugar
- 2 eggs
- 1 teaspoon vanilla extract
- 3 ¼ cups flour
- 4 packages (or ¾ cup) hot chocolate mix (do not use sugar-free)
- 1 teaspoon salt
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- 1 cup semi-sweet chocolate chips
- 1 cup Mallow Bits (do not use mini marshmallows)
In a large mixing bowl of a stand mixer, beat butter and both sugars until light and fluffy. Add in the eggs and vanilla extract and combine well.
In a medium bowl, combine your dry ingredients: flour, hot chocolate mix, salt, baking soda, and baking powder.
Gradually add the dry ingredients to the butter and sugar mixture. Mix well. Stir in chocolate chips and Mallow Bits.
Cover the bowl and chill for 30 minutes and up to 24 hours. (I chilled mine for an hour).
Preheat oven to 350 degrees F. Line cookie sheets with parchment paper or a silicone baking mat.
Using a cookie scoop, drop a 1 1/2 tablespoon of dough onto prepared baking sheets. Bake for 9 - 11 minutes, or until the edges are lightly browned.
Remove from oven and let cookies cool on baking sheet for 5 minutes before removing and cooling completely on wire racks.
