Baked Oatmeal with Blueberries

This Baked Oatmeal with Blueberries is naturally sweetened with real ingredients and loaded with fresh fruit. Prepared the night before and baked in the morning, this healthy and delicious breakfast will be loved by all.

Ingredients

  • 2 cups Old Fashioned Oats
  • ¾ cup milk
  • 1 cup unsweetened applesauce
  • ¼ cup chopped walnuts
  • 2 eggs
  • ¼ cup pure maple syrup (not pancake syrup)
  • 2 teaspoons vanilla extract
  • teaspoons cinnamon
  • ½ teaspoon baking powder
  • ¼ teaspoon salt
  • 2 cups blueberries

Instructions

  • Gather your ingredients and a large mixing bowl. Add the oats, milk, applesauce, eggs, maple syrup, vanilla extract, walnuts, cinnamon, baking powder, and salt in the large bowl. Mix well with a wooden spoon.
  • Spray a 7″ x 11″ baking dish with nonstick spray. Spread half of the oat mixture in the casserole dish (a little more than 1½ cups). Top that with about ¾ of the blueberries. Spread the remaining batter over the blueberries carefully. Be sure not to mash any of the blueberries open. The juices can turn the oatmeal a grey color. Add the remaining blueberries to the top of the oat mixture.
  • Cover with plastic wrap and chill the dish in the refrigerator overnight (or for at least 8 hours). Check the tips for baking right away tips.
  • To bake the oatmeal: Uncover and allow the dish to come to room temperature while the oven is preheating (350 degrees). Bake uncovered for about 30 – 35 minutes, or until the top is golden brown. Allow it to rest for five or so minutes before you slice and enjoy.

Notes

    • A 9x9 inch baking dish can be used, cook time will need to be increased by 5 - 10 minutes.
    • Fresh or frozen fruit can be used, no need to defrost if frozen.
    • Substitute milk for any dairy free milk alternatives.
    • Use chopped pecans in place of walnuts.
    • To make this sugar- free, omit the maple syrup and use Splenda or Stevia.
    • In place of the maple syrup you can use brown sugar.
    • To bake without chilling: use Quick Oats in place of the Old Fashioned. Let it sit for about 10 - 15 minutes while the oven is preheating. The only difference is that it won't be as cake-like but it will still be delicious.
