Easy Santa Charcuterie Board

Equipment

  • 15 inch round wooden cutting board
  • parchment paper
  • knife
  • small jar or bowl for raspberry preserves

Ingredients

  • wheel of Brie cheese (for the Santa face and pompom on the hat)
  • Laughing Cow creamy white cheddar cheese wheels (you’ll use 4 total for the fuzzy part on the hat and mustache)
  • 1 black olive slice, cut in half (for Santa’s eyes)
  • strawberries, sliced in half (for hat)
  • small grape tomato half (for nose)
  • 2 containers marinated fresh mozzarella balls (for beard)
  • 8 slices salami (for meat rose)
  • 12 slices pepperoni (for meat rose)
  • deli turkey slices, cut into thirds
  • green grapes
  • blackberries
  • cubes of pepper jack cheese and cheddar cheese
  • raspberry preserves
  • trail mix
  • gherkin pickles
  • rosemary sprig and pomegranate seeds (optional for garnish)
  • assortment of crackers

Instructions

  • Line your round board with a piece of parchment paper if you wish. This just keeps your board clean.
  • To make the Santa face: cut off a small portion of the bottom of the Brie cheese. Set the smaller piece aside for now. Place Brie cheese on your board as indicated in the images.
    Using 4 wedges of the Laughing Cow cheese, spread some of it next to the top of the “face” as shown in the images. Then do the same with the Laughing Cow cheese to create a mustache. Cut the olive slice in half and place it on the “face” where you want the eyes to be. Add the half of grape tomato for the nose.
  • Arrange the strawberry halves for the Santa hat. Take the reserved Brie cheese and either use a small cookie cutter or sharp knife to cut out a pompom for the hat and place it accordingly. To make the beard: use the marinated fresh mozzarella balls to create Santa’s beard.
  • Make the meat roses:
    Using a shot glass to hold the meat slices in place, press the pepperoni slice on the rim of the glass, half inside and half outside the glass.
    Add the next slice of pepperoni halfway over that one, then repeat that process with more pepperoni slices. You will use 12 slices total per pepperoni rose. REPEAT this procedure for the salami rose except you will use 8 slices of salami.
    Note: be sure to push the slices against the inside and outside of the shot glass, this will help keep the roses formed and easily removed to your board.
  • Add the salami rose to the board on the left side of Santa’s face. Add some grapes above that and cheddar cheese cubes below the rose. Add a few pepper jack cheese cubes above the hat. Place the small container of preserves on the right side of Santa’s face.
  • Cut a couple of slices of deli turkey into thirds. Roll them up “pinwheel” style and place on board near the top of the hat pompom (as shown in pictures).
  • Take a few gherkin pickles and place above the pepperjack cheese. Place the pepperoni rose between the turkey and the raspberry preserves.
  • Fill in the empty spaces around the jar with some blackberries. Add some trail mix below the jar. Garnish other empty spots with pieces of rosemary and pomegranate seeds to resemble holly berries. Enjoy!
