Easy Brunch Charcuterie Board

Ingredients

  • 1 blood orange, cut in half
  • 2 kiwis
  • 6 strawberries
  • 4 thin round slices of ham
  • 3 slices of prosciutto
  • 3 slices of cheddar cheese
  • 6 eggs, scrambled
  • 3 slices of bacon, cut in half
  • 4 mini blueberry muffins
  • 4 mini bagels, cut in half
  • ¼ cup garden vegetable cream cheese
  • ¼ cup apple jelly
  • sprigs of rosemary, for garnish

Instructions

  • Add the bacon to a medium skillet, and cook over medium heat, flipping once, until done to your desired crispiness.
  • Crack the eggs into a bowl, and use a whisk to scramble them. Pour into a small skillet, and cook over medium heat, stirring often, until done.
  • While the bacon and eggs are cooking, assemble your board. Cut the cheese into quarters.
  • Make diagonal cuts across the entire center of the kiwis. Gently pull apart. Cut the blood orange in half.
  • Set a platter or bowl for the eggs towards the top center of the board. Arrange the bagel halves below the egg platter, wrapping it.
  • Add a small jar filled with the jelly under the bagels, slightly to the right. Add a small bowl filled with cream cheese under the bagels, on the left side.
  • Add half a blood orange above the left bagel, and the other above the egg platter on the right.
  • Fold the ham in half, then in half again. Arrange under the bagels, next to the jelly. Fold the prosciutto into thirds, and arrange it above the blood orange on the left. Layer the cheddar cheese in a half circle, surrounding the bowl of cream cheese.
  • Arrange the strawberries underneath the jar of jelly. Arrange the cooked bacon underneath the orange on the right, above the bagel slices. Arrange 2 kiwi halves under the orange on the left, next to the bagels. The other kiwi should be arranged between the prosciutto and blood orange at the top of the platter. Fill in the obvious 4 bare spots with the muffins.
  • Add the scrambled eggs to the platter. Fill in additional bare spots with sprigs of rosemary. Serve and enjoy
