French Toast without Eggs

Ingredients

  • cups milk (whole is preferred)
  • 2 tablespoons cornstarch
  • 1 teaspoon cinnamon, divided
  • 1 teaspoon vanilla
  • 4 tablespoons butter (for the griddle)
  • 8 slices bread
  • maple syrup and butter, for serving

Instructions

  • Heat ½ tablespoon of butter in a griddle over medium-low heat. Add milk, cornstarch, half the cinnamon (½ teaspoon), and vanilla to a shallow bowl, and whisk well. You will add the rest of the cinnamon in for the second batch.
  • Coat each side of a slice of bread (4 slices) into the milk mixture, and set on the griddle. Cook for 7-8 minutes on one side, flip, then cook for an additional 5-6 minutes on the other side. Repeat with the remaining bread slices.
  • Serve hot with butter and warm maple syrup. Or, top the fresh berries.
