  • 2 tbsp olive oil
  • 1 lb ground beef
  • 1 medium green bell pepper, coarsely chopped
  • 1 medium yellow onion, diced
  • 2 garlic cloves, minced
  • 1 medium jalapeno pepper, seeded and diced
  • 2 tbsp chili powder
  • 2 tbsp ground cumin
  • 1 tbsp dried oregano
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/4 tsp ground cinnamon
  • 8 oz tomato paste
  • 1/2 cup creamy peanut butter
  • 1 tbsp Worchestershire sauce
  • 1 can (15 oz) diced tomatoes, undrained
  • 3 cups low sodium beef stock
  • 1 can (15 oz) pinto beans, drained and rinsed

  • Heat one tablespoon of olive oil in a large Dutch oven over medium-high heat. Add the ground beef and brown.
  • Once ground beef is browned, add the bell pepper, onion, garlic, and jalapeno and cook until softened. About 5 minutes.
  • Add the chili powder, cumin, oregano, salt, pepper, and cinnamon. Stir in seasonings well with the beef mixture.
  • Add the tomato paste and peanut butter, stirring in until combined. Let cook about 2-3 minutes before adding the Worchesterhire sauce, tomatoes, and stock.
  • Simmer for 30 minutes, then add the beans and allow chili to cook for another 10 minutes. Serve and enjoy!
