Neapolitan Cookies

Neapolitan Cookies are chewy cookies with the flavors of strawberry and vanilla, then dipped in dark chocolate.

Ingredients

  • 1 box (15.25 ounces) Strawberry Cake Mix
  • 1 box (15.25 ounces) Vanilla Cake Mix (I used a French Vanilla cake mix)
  • 1/2 cup vegetable oil, DIVIDED
  • 4 eggs DIVIDED
  • 2 teaspoons baking powder, DIVIDED
  • 1 cup dark chocolate melting wafers
  • various sprinkles of your choice

Instructions

  • Line a baking sheet with a silicon baking mat or parchment paper
  • In one medium bowl combine the strawberry cake mix, 1/4 cup vegetable oil, 2 eggs, and 1 teaspoon baking powder. Mix to form a dough. It will be sticky, this is normal.
  • In another medium bowl combine the vanilla cake mix, 1/4 cup vegetable oil, 2 eggs, and 1 teaspoon baking powder. Mix to form a dough. It will be sticky, this is normal.
  • Place both bowls of dough in the freezer for a few minutes (5-8 min) to firm up the dough.
  • Once the dough has been chilled, make 1 tablespoon dough balls from both bowls. Take a ball of vanilla dough and a ball of strawberry dough and roll them together. Place on prepared baking sheet and place in freezer for 10 minutes before baking. This will keep the cookies from spreading too much while baking.
  • Bake for 10 - 12 minutes, depending on how your oven bakes. My cookies took closer to the 12 minutes to bake. Remove pan from oven and allow to cool for a few minutes on baking sheet before removing to cooling rack. This will allow the cookies to firm up and to bake a bit more.
  • Once the cookies are cooled, melt the dark chocolate wafers according the package instructions. Dip cooled cookies in the chocolate and top with sprinkles.
