Blueberry Daiquiris
Kick back with a blueberry daiquiri and enjoy the last days of summer. The fresh blueberries with the fresh lime juice and the added rum makes this daiquiri a refreshing treat!

- 1/2 cup sugar
- 1/2 cup water
- 1 pint blueberries
- 1 1/4 cups rum
- 1/4 cup 1fresh lime juice
- enough ice to fill blender a little more than halfway
In a medium saucepan over medium-high heat, combine the sugar and water and bring to a low boil, stirring until the sugar dissolves.
Add the blueberries and reduce the heat to a simmer. Use a wooden spoon to crush the berries so that their juices are released into the syrup. Simmer for 20 minutes.
Press the berry mixture through a fine-mesh sieve set over a bowl and discard the solids.You just want the syrup not the fruit parts.
In a blender, add ice then combine the berry syrup, rum, and lime juice. Blend until smooth. Serve immediately.
