It’s not often that I watch the cooking show, The Kitchen on the Food Network channel but when I do I seem to get some really great tips and ideas for meals and shortcuts in prepping recipes. A few weeks ago I was kicking back with my morning coffee and turned the show on near the end of it. They nearly always end the show with some sort of cocktail and Katie Lee was doing the honors with a Blueberry Daiquiri. This caught my attention and intrigued me because I’ve had various flavors of daiquiris over the years but never BLUEBERRY! I was excited to try this drink.
When I try a recipe that isn’t mine, I like to make it (the first time) as it is written. If it’s good, I may tweak it or not; however, if I see that it needs some serious work for my family to love it then I’ll adapt it for that reason. This Blueberry Daiquiri recipe is a perfect example of said adaptations.
The recipe it self is super easy to make as it starts with a blueberry simple syrup and then you add rum – – a lot of rum with ice and fresh lime juice. I said a lot of rum because I made it EXACTLY as Katie Lee had it in her recipe and on the show. Holy Crap on a Cracker!! It was like drinking straight rum with a hint of blueberry. Alcohol poisoning could have taken place. It was a nice purplely-blue color though.
Of course, we could not drink that and no amount of fixing that would change that fact. So, I set out and remade it with a much lower amount of rum. In Katie Lee’s defense, she did say “it has a lot of rum” but – – wow! Once the next batch was remade – OH BABY, they were GOOD!! Delicious!!
Kick back with a blueberry daiquiri and enjoy the last days of summer. The fresh blueberries with the fresh lime juice and the added rum makes this daiquiri a refreshing treat!
Four ingredients to this Blueberry Daiquiri
The blueberries cook down in the simple syrup to a beautiful thick syrup.
Tip: this can also be used to pour on to pancakes or waffles, too.
Use the back of a wooden spoon to press the syrup through the sieve. Discard the solids.
- 1/2 cup sugar
- 1/2 cup water
- 1 pint blueberries
- 1 1/4 cups rum
- 1/4 cup 1fresh lime juice
- enough ice to fill blender a little more than halfway
- In a medium saucepan over medium-high heat, combine the sugar and water and bring to a low boil, stirring until the sugar dissolves.
- Add the blueberries and reduce the heat to a simmer. Use a wooden spoon to crush the berries so that their juices are released into the syrup. Simmer for 20 minutes.
- Press the berry mixture through a fine-mesh sieve set over a bowl and discard the solids.You just want the syrup not the fruit parts.
- In a blender, add ice then combine the berry syrup, rum, and lime juice. Blend until smooth. Serve immediately.
