Irish Pub Style Potato Nachos

Irish Pub Style Potato Nachos are the ultimate crowd-pleasing appetizer for St. Patrick's Day or snack night. Crispy potatoes, melted cheese, and your favorite nacho toppings all piled high to devour.

Ingredients

  • 6 small-medium Russet potatoes, washed, dried, and thinly sliced (¼ inch slices)
  • 2 tablespoons olive oil
  • salt and pepper
  • 1 cup freshly grated sharp cheddar cheese
  • 2 ½ ounce package of real bacon pieces
  • 2 green onions
  • 3 jalapeños
  • ½ cup sour cream
  • ½ cup pico de gallo

Instructions

  • Preheat the oven to 450 degrees. Spray a baking sheet with nonstick cooking spray and set aside.
  • Wash and dry the potatoes, then thinly slice them into ¼ inch rounds.
  • In a medium bowl, add potato slices, olive oil, salt, and pepper to a bowl. Stir to coat the potatoes.
  • Wash and slice the jalapenos, and slice the green onions. Set aside.
  • Arrange potatoes in a single layer. Bake for 15-18 minutes, or until tender, turning halfway during baking time.
  • Remove pan from oven, and sprinkle the cheese and bacon bits all over the potatoes, then place under the broiler for 2-3 minutes, until the cheese is melted and bubbly.
  • Once the cheese is melted, remove the pan and top potato nachos with sliced jalapenos and green onions. Serve with pico de gallo and sour cream.

Notes

  • Be sure to slice your potatoes thinly or they will take longer to bake and crisp up in the oven. Using a mandoline will give you an even thickness for every slice, but use caution to not cut your fingers.
  • Sharp cheddar cheese is what I used but pepper jack or habanero cheese is just as delicious and will spice the nachos up even more.
  • No potatoes? No problem. Use frozen tater tots, waffle fries, or steak fries. Baked as directed on the package and then follow this recipe for the rest.
  • Can these nachos be made ahead? The potato nachos are best served when they’re fresh and hot from the oven.
  • Reheat leftovers in the oven at 400 degrees for about 10-15 minutes.
