Ingredients

  • 1 tablespoon olive oil
  • 1 pound ground beef
  • 2 cloves garlic, minced
  • 1 package taco seasoning
  • 12 ounce bag tortilla chips
  • 1 15 ounce cane black beans, drained and rinsed
  • 1 cup corn kernels
  • 1 cup shredded cheddar cheese
  • ½ cup shredded Monterey Jack cheese
  • 1 Roma tomato, diced
  • ¼ cup diced red onion
  • 1 large jalapeno, sliced thin
  • sour cream, optional
  • chopped fresh cilantro, optional

Instructions

  • Preheat oven to 400 degrees. Spray a large baking sheet with non-stick cooking spray.
  • In a large skillet, heat over medium-high heat. When hot, add the ground beef and cook until browned, breaking it up as it cooks. Once the beef is cooked, drain any excess fat (do not rinse). hen add in the minced garlic and taco seasoning; stir well.
  • Place tortilla chips in a single layer onto the prepared baking sheet. Top the chips with taco meat, black beans, corn, and both cheeses.
  • Place pan into the oven and bake until heated through and the cheeses have melted about 5-6 minutes. Remove from the oven and top with diced tomato, onion, and jalapeno slices.
  • Add a few drizzles of sour cream, and chopped cilantro, if desired before serving.
