  • 1 cup leftover turkey, chopped or shredded
  • 1 cup stuffing
  • 1 cup mashed potatoes
  • 1 egg, beaten
  • 8 - 10 egg roll wrappers
  • cranberry sauce, for dipping

Instructions

  • I like to start by having all the tools and ingredients out on my countertop. In a medium bowl, mix the turkey, stuffing, and potatoes.
  • Place two heaping tablespoons of mixture onto the center of an egg roll wrapper.
  • In a small bowl, beat the egg. Brush the beaten egg on the edges of the wrapper.
  • Fold the bottom corner up to the center of the filling. Then fold the two side corners into the center.
  • Finally, fold and roll the top corner down, enclosing the egg roll, and place in the air fryer basket, do not crowd. 
  • Spray lightly the tops of the egg rolls with non-stick spray. Cook at 375 degrees for 10 minutes on one side and 3 on the other side; make sure you spray each side with cooking spray. 
  • Remove and let cool for a few minutes before eating. Dip in cranberry sauce or gravy.
