Broccoli Casserole in Crock Pot

  • 6 tablespoons unsalted butter
  • 1 small onion, diced
  • 3 cloves garlic, minced
  • 6 tablespoons flour
  • 3 cups milk
  • salt and pepper, to taste
  • 1 teaspoon garlic powder
  • 8 cups fresh broccoli florets
  • 2 cups shredded cheddar cheese, divided
  • cups French fried onions

Instructions

  • Melt butter in a saucepan over medium heat, then sauté onion until soft. Add garlic and cook for 30 seconds.
  • Whisk in flour and cook for 2–3 minutes, stirring constantly. Gradually whisk in milk until smooth, then add seasonings and cook until thickened.
  • Lightly spray a 6-quart slow cooker and add broccoli. Pour the sauce over and stir to coat. Cover and cook on LOW for 1½ hours.
    Stir, then cook for another 30 minutes until tender-crisp. Slow cookers can vary in cooking times, so check for doneness and adjust as needed.
  • Mix in 1½ cups of cheese, then top with the remaining cheese and fried onions. Cook uncovered for 10 minutes until the cheese melts. Serve warm.

Notes

  • Use Pre-Cut Florets: Bagged, washed florets cut down on prep time.
  • Frozen Works Too: Thaw and drain well, then reduce cook time slightly.
  • Prep the Sauce Early: Make it a day ahead and refrigerate.
  • Try Different Cheese: Swap in gouda or a blend for variety.
  • Add Protein: Mix in cooked chicken, ham, or bacon.
  • Gluten-Free Option: Use a 1:1 gluten-free flour substitute.
