Heat a square griddle pan or large skillet over medium-low heat. Whisk together eggs, milk, vanilla, and spices in a small bowl. Coat each side of a slice of bread in the mixture.
Place slices on the griddle and cook for 4 minutes, then flip over and cook for an additional 3-4 minutes.
