  • 1 box (1 pound) elbow macaroni
  • ½ cup shredded cheddar cheese
  • ¼ cup diced celery
  • ¼ cup chopped red onion
  • ¼ cup chopped dill pickles
  • 1 tablespoon diced pimentos
  • cups mayonnaise
  • cup pickle juice
  • 1 teaspoon sugar
  • ½ teaspoon black pepper

Instructions

  • Chop the celery, onion, and pickles into small pieces.
  • Cook the elbow macaroni according to package directions until al dente, then rinse with cold water and drain.
  • Whisk together mayonnaise, pickle juice, sugar, and black pepper in a small bowl.In a large bowl, combine the cooled macaroni and the dressing, tossing to coat.
  • Gently fold in the chopped vegetables, cheddar cheese, and diced pimentos. Cover and refrigerate for at least one hour before serving.
