- 8 oz uncooked orzo pasta
- 1/2 red bell pepper, diced
- 1/2 green bell pepper, diced
- 1 cucumber, seeded and diced
- 1 pint (2 cups) grape tomatoes, halved
- 2/3 cup red onion, diced
- 1/2 cup crumbled feta cheese
Also will need the following for the dressing
- 2 tbsp dry mix of Zesty Italian dressing, see below for big batch mix of this dressing
- 2 tbsp water
- 1/4 cup white vinegar (or white wine vinegar)
- 2/3 cup light olive oil
- sprinkling of fresh lemon juice
Dry Ingredients for Zesty Italian Dressing (for multiple uses)
- 2 tbsp dried oregano
- 1 tbsp garlic powder
- 1 tbsp onion powder
- 1 tsp red pepper flakes
- 1 tbsp sugar
- 1 tsp pepper
- 1 tsp dried basil leaves
- 1 tsp lemon pepper seasoning
- 1 tsp dried thyme
You will only use 2 tablespoons of this mix for each batch of dressing you want to make. Store the remaining mix in an airtight container.
