Ingredients

  • 3 salmon filets
  • ½ - ¾ pound fresh green beans
  • ¾ pound baby red potatoes
  • 3 tablespoons butter
  • 4 cloves garlic, minced
  • 2 tablespoons vegetable broth (or chicken broth)
  • 1 tablespoon sriracha sauce
  • salt and pepper, to taste
  • parsley, chopped (for garnish)

Instructions

  • First, preheat your oven to 400 degrees Fahrenheit. Spray your baking pan with nonstick spray.
  • Next, prep your veggies. Trim the ends off the green beans. Halve any larger baby red potatoes (you can quarter them if they are very big).
  • Now, make the sauce. Melt the butter in a small dish in the mircowave. Stir in the minced garlic, vegetable broth, sriracha, salt, and pepper. Mix well.
  • Coat the salmon: lightly brush the fillets with some of the butter mixture. Then, drizzle the remaining sauce over the green beans and potatoes, tossing to coat the vegetables. Bake for 20 to 25 minutes. The fish is done when it flakes easily and is opaque.
Finally, sprinkle fresh parsley over everything and serve this tasty and easy meal!
