Spray a 9×13-inch casserole dish with nonstick spray. Set aside. Cut the loaf of bread into one-inch cubes. In a large mixing bowl, whisk together the eggs, milk, vanilla, and cinnamon. Add the bread cubes to the bowl, and toss gently to coat it all in the batter.
Pour the soaked bread into the casserole dish and spread evenly. Then, spoon apple pie filling over the bread mixture. Cover and refrigerate for 1 hour, or up to 8 hours.
Remove the casserole dish from the refrigerator, and preheat the oven to 350 degrees. Bake for 50-55 minutes, then remove from the oven. Add the drizzle ingredients (powdered sugar, milk, and vanilla) to a small bowl, and stir until smooth. Drizzle over the top of the casserole.
