Equipment

Ingredients

  • 1 package (17.3 ounces) puff pastry sheets, thawed
  • ¼ pound turkey (shredded leftover or thin deli slices)
  • pound thinly sliced ham or used shaved ham
  • cups shredded Swiss cheese
  • 2 tablespoons yellow mustard
  • 18 slices of pickles (I like to use the sandwich stacker pickles)
  • 1 egg, beaten
  • 1 tablespoon water

Instructions

  • Preheat oven to 400 degrees. Line baking sheets with parchment paper. Set aside.
  • Unfold pastry sheets and cut each sheet into 9 squares. Spread about ½ teaspoon of yellow mustard over the puff pastry.
  • Arrange turkey slices down the diagonal center of pastry squares. Then add one slice of ham to each square.
  • Next layer a pickle slice and some shredded Swiss cheese to the top of each pastry puff square.
  • Fold the two opposite corners of each square over the filling and press the edges to seal. Place on prepared baking sheet.
  • Whisk the egg and water together in a small bowl. Using a pastry brush, brush each pastry puff with the egg wash.
Bake 15-18 minutes, until golden brown. Serve immediately.

Notes

  • If you don’t have leftover turkey, you can use deli turkey slices.
  • Use a small slice of Swiss cheese in place of the shredded Swiss.
  • You can assemble the puffs ahead of time and store them in the refrigerator until ready to bake.
  • For a make-ahead meal, freeze the assembled puffs before baking. When ready to serve, thaw them overnight in the refrigerator and bake as directed.
  • Add a pinch of cayenne pepper or a slice of jalapeño pepper to the filling for a spicy kick.
  • Drizzle the baked puffs with a honey-mustard sauce or a sweet chili sauce for a sweet and savory twist.
  • Experiment with different types of cheese, such as provolone, gouda, or Havarti.
  • Instead of puff pastry, use phyllo dough or crescent rolls for a different texture.
