- 1 package (17.3 ounces) puff pastry sheets, thawed
- ¼ pound turkey (shredded leftover or thin deli slices)
- ⅓ pound thinly sliced ham or used shaved ham
- 1½ cups shredded Swiss cheese
- 2 tablespoons yellow mustard
- 18 slices of pickles (I like to use the sandwich stacker pickles)
- 1 egg, beaten
- 1 tablespoon water
Preheat oven to 400 degrees. Line baking sheets with parchment paper. Set aside.
Unfold pastry sheets and cut each sheet into 9 squares. Spread about ½ teaspoon of yellow mustard over the puff pastry.
Arrange turkey slices down the diagonal center of pastry squares. Then add one slice of ham to each square.
Next layer a pickle slice and some shredded Swiss cheese to the top of each pastry puff square.
Fold the two opposite corners of each square over the filling and press the edges to seal. Place on prepared baking sheet.
Whisk the egg and water together in a small bowl. Using a pastry brush, brush each pastry puff with the egg wash. Bake 15-18 minutes, until golden brown. Serve immediately.
- If you don’t have leftover turkey, you can use deli turkey slices.
- Use a small slice of Swiss cheese in place of the shredded Swiss.
- You can assemble the puffs ahead of time and store them in the refrigerator until ready to bake.
- For a make-ahead meal, freeze the assembled puffs before baking. When ready to serve, thaw them overnight in the refrigerator and bake as directed.
- Add a pinch of cayenne pepper or a slice of jalapeño pepper to the filling for a spicy kick.
- Drizzle the baked puffs with a honey-mustard sauce or a sweet chili sauce for a sweet and savory twist.
- Experiment with different types of cheese, such as provolone, gouda, or Havarti.
- Instead of puff pastry, use phyllo dough or crescent rolls for a different texture.
