Sheet Pan Maple Glazed Salmon with Vegetables

Ingredients

  • 4 fresh salmon filets
  • 1 pound broccoli florets
  • 1 large sweet potato, diced into 1 inch pieces
  • ½ teaspoon minced garlic
  • ½ tablespoon ground mustard
  • 1 tablespoon Dijon mustard
  • 2 tablespoons pure maple syrup (not pancake syrup)
  • chopped parsely, for garish (optional)

Instructions

  • Preheat the oven to 400 degrees, and spray a baking sheet with non stick spray. Set aside.
  • Peel and dice the sweet potato.
  • In a small bowl, combine the minced garlic, the ground mustard, Dijon mustard, and syrup.
  • Arrange the salmon on the baking sheet, and spread the glaze over each filet . Arrange the broccoli florets and sweet potato around the salmon. Bake for 15-20 minutes, or until the salmon reaches 145 degrees. Remove from oven and garnish with fresh chopped parsley, if desired. Serve.
