Ingredients
4freshsalmon filets
1poundbroccoli florets
1largesweet potato, diced into 1 inch pieces
½teaspoonminced garlic
½tablespoonground mustard
1tablespoonDijon mustard
2tablespoonspure maple syrup (not pancake syrup)
chopped parsely, for garish (optional)
Instructions
Preheat the oven to 400 degrees, and spray a baking sheet with non stick spray. Set aside.
Peel and dice the sweet potato.
In a small bowl, combine the minced garlic, the ground mustard, Dijon mustard, and syrup.
Arrange the salmon on the baking sheet, and spread the glaze over each filet . Arrange the broccoli florets and sweet potato around the salmon. Bake for 15-20 minutes, or until the salmon reaches 145 degrees. Remove from oven and garnish with fresh chopped parsley, if desired. Serve.
