Sheet pan meals are convenient and easy to make. They are exactly what the name implies, a dinner cooked on a baking pan. All of the components together with seasoning or a sauce roasted in the oven like in this Sheet Pan Hawaiian Pineapple Chicken dinner.

This flavor-packed maple and mustard glazed sheet-pan salmon is roasted with sweet potatoes and broccoli for a delicious easy meal that’s filled with fiber and protein and can be served with an easy tossed green salad or brown rice if desired. Ingredients

  • 4 salmon filets
  • 1 pound broccoli florets
  • 1 large sweet potato, diced into 1-inch pieces
  • ½ teaspoon minced garlic
  • ½ tablespoon ground mustard
  • 1 tablespoon Dijon mustard
  • 2 tablespoons pure maple syrup (not pancake syrup)
  • Parsley for garnish, optional

Directions

Step 1

Preheat the oven to 400 degrees, and spray a baking sheet with non stick spray. Set aside.

Step 2

Peel and dice the sweet potato.

In a small bowl, combine the minced garlic, the ground mustard, Dijon mustard, and syrup. Arrange the salmon on the baking sheet, and spread the glaze over each filet.

Step 4

Arrange the broccoli florets and sweet potato around the salmon. Bake for 15-20 minutes, or until the salmon reaches 145 degrees.

Remove the baking sheet from the oven. Chop the parsley and sprinkle over the salmon, if desired.

  • Take a few shortcuts from the grocery store. You can buy already cubed sweet potatoes and fresh broccoli florets in the produce aisle. This does save time but may not save some money.
  • If you’re using frozen salmon, thaw before cooking for this recipe.
  • Be sure to use real maple syrup in this recipe.
  • Lining your sheet pan with aluminum foil is an even easier clean-up tip – just be sure to spray the foil well so the food doesn’t stick while cooking.
  • Want more of the maple glaze? Double the maple and mustard mix and save half of it to brush over the vegetables while they are roasting.
  • Prep tip: cut up your sweet potato and broccoli florets the night before. Keep the sweet potatoes in a container of water in the refrigerator and the broccoli in an airtight container (no water).
