If using frozen puff pastry, allow it to thaw out for about 30 minutes before using. Preheat oven to 400 degrees and spray a baking sheet with non-stick spray, or line.
Cut unbaked puff pastry into equally sized rectangles. I used one of the smoked sausages as a guide when cutting the puff pastry. I like to have a bit of the sausage showing at the ends. Using a pizza cutter or sharp knife, cut the puff pastry into 5 strips and then each strip into fourths.
Roll 1 little sausage in each puff pastry rectangle. Pinch at the seams. Place seam side down onto the baking sheet at least once inch apart. Repeat until all sausages are wrapped.
Brush each one with the egg wash and then sprinkle the everything bagel seasoning onto each.
Bake in oven for 15-20 minutes, or until puff pastry is golden brown. Remove from oven and serve while warm. If desired, serve with dipping sauces like cheese dip, honey mustard, or barbeque sauce.
- Make mini pigs in a blanket with cheese by adding a small amount of shredded cheddar cheese to each one before rolling it up.
- Use hot dogs, cut into thirds, or use smoked sausage cut into 2-inch half-moon shapes.
- Substitute crescent dough in place of the puff pastry
- Instead of the everything bagel seasoning, use sesame seeds only.
- Use hot dogs and a larger piece of puff pastry for a fun spin on your hot dog bun
- Reheat leftovers in the oven for a few minutes to crisp up.
- Make ahead but prepare pigs in a blanket, and refrigerate covered. Before baking, brush with egg wash.
