Garden Fresh Bruschetta

What a perfect way to capture the flavors of garden ripe tomatoes, fresh basil, garlic, and olive oil spooned over lightly toasted slices of Italian bread!

Ingredients

  • 4 Roma tomatoes, diced small
  • cup fresh basil, chopped
  • 1 tablespoon minced garlic
  • tablespoons olive oil
  • 1 tablespoon balsamic vinegar
  • ½ teaspoon salt
  • ½ teaspoon ground pepper
  • ½ loaf French baguette, cut into 12 slices (discarding the ends)
  • ¼ cup shredded Parmesan cheese

Instructions

  • Dice the tomatoes into small pieces, and chop the basil.
  • Add the tomatoes, basil, olive oil, balsamic vinegar, minced garlic, salt and pepper to a medium bowl and toss to combine. Set aside.
  • Slice the bread into 12 pieces on a slight angle. Arrange on a parchment lined baking sheet.
  • Top each bread slice with a sprinkle of parmesan and put under the oven broiler for 2-3 minutes, until golden.
  • Top the bread slices with the tomato mixture, and serve.
