Garden Fresh Bruschetta
What a perfect way to capture the flavors of garden ripe tomatoes, fresh basil, garlic, and olive oil spooned over lightly toasted slices of Italian bread!

- 4 Roma tomatoes, diced small
- ⅓ cup fresh basil, chopped
- 1 tablespoon minced garlic
- 1½ tablespoons olive oil
- 1 tablespoon balsamic vinegar
- ½ teaspoon salt
- ½ teaspoon ground pepper
- ½ loaf French baguette, cut into 12 slices (discarding the ends)
- ¼ cup shredded Parmesan cheese
Dice the tomatoes into small pieces, and chop the basil.
Add the tomatoes, basil, olive oil, balsamic vinegar, minced garlic, salt and pepper to a medium bowl and toss to combine. Set aside.
Slice the bread into 12 pieces on a slight angle. Arrange on a parchment lined baking sheet.
Top each bread slice with a sprinkle of parmesan and put under the oven broiler for 2-3 minutes, until golden.
Top the bread slices with the tomato mixture, and serve.
