Glazed Blackberry Chicken
These Glazed Blackberry Chicken breasts are grilled to perfection, basted with a homemade blackberry glaze and then topped with more of the fruity glaze. Delicious change from your normal BBQ sauce.

- 6 ounces fresh or frozen blackberries
- ΒΌ cup water
- 1 tablespoon sugar
- 2 tablespoons fresh lemon juice
- 1 tablespoon stone ground mustard
- 2 tablespoons unsalted COLD butter
- 6 chicken breasts, boneless and skinless
- 1 - 2 tablespoons Blackberry Smoky Honey Seasoning and Dry Rub from Rainier Foods
Make the blackberry sauce. Combine frozen or fresh blackberries, water, lemon juice, and sugar in a small saucepan over medium heat. Mash the blackberries as you stir, and cook until the mixture is reduced to about β
cup. It will be a little thick.
Remove from the heat and stir in the 2 tablespoons cold butter and the grainy mustard. Essentially, you just made Blackberry BBQ Sauce.
Transfer half the glaze to a small bowl, this will be used to serve with the cooked chicken. The other half you will use to baste the chicken while grilling.
Preheat grill to medium heat (about 350 β 375 degrees F.). Season both sides of the boneless, skinless chicken breasts with the blackberry smoky honey dry rub. When grill is ready, cook the chicken for 6-8 minutes, flip the meat over on the other side and baste with the reserved glaze.
Grill chicken for another 6 minutes, or until internal temperature reaches a temperature of 165 degrees F. Flip one last time and use remaining glaze on chicken. Remove chicken to platter and allow to rest for a couple of minutes before serving. Serve with the blackberry glaze you reserved in a small bowl.
