Preheat the oven to 425°F and lightly coat a baking sheet with cooking spray. Place the flour, Italian salad dressing, and Panko breadcrumbs in three separate shallow dishes. Use a separate fork for each dish to keep the breading from clumping and make cleanup easier.
Dredge each boneless pork chop in the flour, shaking off any excess. Dip the pork chop into the Italian dressing, coating both sides, then press it into the Panko breadcrumbs until evenly coated.
Arrange the breaded pork chops on the prepared baking sheet, leaving a little space between each one. Lightly spray the tops with cooking spray to help the coating bake up golden brown and crispy.
Bake for 20 to 25 minutes, or until the pork chops are golden brown and reach an internal temperature of 145°F when checked with an instant-read thermometer.
Remove the pork chops from the oven and let them rest for 5 minutes before serving. This allows the juices to redistribute, keeping the pork tender and juicy.
