Mini Pancake Muffins

These Mini Pancake Muffins are a delightful fusion of fluffy pancakes and muffins. Quick and easy to prepare, these bite-sized treats are perfect for breakfast, brunch, or a snack on the go. Add chocolate chips or sausage as we did for a tasty twist. Make mornings fun and delicious with these mini pancake muffins!

Ingredients

  • 1 cup flour
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • 1 tablespoon sugar
  • 1 cup milk
  • 1 tablespoon melted butter (cooled)
  • ¼ pound maple flavored sausage
  • ¼ cup mini chocolate chips

Instructions

  • Preheat oven to 400 degrees. Spray mini muffin pan with nonstick spray. In a skillet, brown the sausage over medium heat until cooked through. Place cooked sausage crumbles onto a paper towel lined plate to absorb the extra grease.
  • In a medium bowl, whisk together the flour, baking powder, baking soda, and sugar.  In a small bowl whisk the egg and then add milk and melted butter. 
  • Add the wet ingredients to the flour mixture and combine. Divide the batter in half and and in one half add cooked sausage and mini chocolate chips to the other half.
  • Pour pancake mix into mini muffin pans and bake for 8 minutes. Remove from oven and allow to cool for 1-2 minutes before removing from pans. Serve with warm maple syrup or your favorite jams.
