I don’t always have time to make breakfast in the mornings for my family so I look to quick, easy recipes that can be frozen if possible. These Mini Pancake Muffins are all of that and they taste delicious. Whether you eat them plain or add your favorite toppings to the muffin mix, they are a winner with everyone. For this batch of mini muffins I added cooked maple-flavored sausage to half and mini chocolate chips to the other half of the batter.

Baking pancake muffins is easier than flipping pancakes one by one, saving you time and effort. They can be enjoyed alone, added to any breakfast charcuterie board, or served alongside these scrambled egg and sausage breakfast taquitos.

Mini Pancake Muffins

This Mini Pancake Muffin recipe are perfect for busy mornings, leisurely brunches, or even a quick snack. They’re especially good when dipped into warm maple syrup. Simple ingredients are used to make these muffins that you probably already have in your pantry and refrigerator.

They are made with an easy homemade pancake batter and can be filled with all sorts of yummy ingredients such as chopped fruits, nuts, or even lemon zest. There is something about miniature and bite-sized foods that just makes food that much better and more fun to eat, for both young and old alike.

Can you Freeze Mini Pancake Muffins?

Yes, these mini pancake muffins freeze great. Store them stored in a freezer bag until ready to use then heat them up in the microwave for around 30 to 45 seconds to thaw them out.

  • 1 cup flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1 tablespoon sugar
  • 1 egg
  • 1 cup milk
  • 1 tablespoon butter (melted and cooled)
  • 1/4 pound maple flavored sausage
  • 1/4 cup mini chocolate chips

Directions

Preheat oven to 400 degrees. Spray mini muffin pan with nonstick spray. In a skillet, brown the sausage over medium heat until cooked through. Place cooked sausage crumbles onto a paper towel lined plate to absorb the extra grease.

In a medium bowl, whisk together the flour, baking powder, baking soda, and sugar.  In a small bowl whisk the egg and then add milk and melted butter.

Add the wet ingredients to the flour mixture and combine. Divide the batter in half and and in one half add cooked sausage to make the mini pancake muffins with sausage. Add the mini chocolate chips to the other half for chocolate chip mini pancake muffins.

Pour pancake mix into mini muffin pans and bake for 8 minutes. Remove from oven and allow to cool for 1-2 minutes before removing from pans.
