Prep this recipe the day before you want to serve it. If future servings are needed, I always keep a tray or two of the pumpkin ice cubes in the freezer and I brew coffee to store in the refrigerator.
Brew the coffee and refrigerate overnight. The coffee needs to be very cold. In a small bowl, whisk the milk, pumpkin, maple syrup, cinnamon, cloves, and nutmeg together until combined. Pour into ice cube tray and allow to freeze overnight.
The next day, add all the ice cubes and the cold coffee to the blender and blend on high until smooth and frappe-like. Add more oat milk if your blender isn’t blending it well. Taste the frozen drink and add more maple syrup or spices if needed.
Pour into glass and serve with whipped cream, if desired.
