  • 1 ½ - 2 pounds large boneless, skinless chicken breasts
  • 1 ¼ pound diced red potatoes (about 4 cups)
  • ½ pound fresh green beans, ends trimmed (about 2½ cups)
  • cup fresh lemon juice (not bottled)
  • ¼ cup olive oil
  • 2 - 3 cloves garlic, minced
  • 1 teaspoon salt
  • ¼ teaspoon ground black pepper
  • 1 teaspoon oregano
  • ¼ teaspoon onion powder
  • ¼ teaspoon garlic powder

Instructions

  • Line your slow cooker with an easy liner or spray with nonstick spray.
  • Optional step: If you prefer to brown your chicken breasts before placing them in the slow cooker, heat a large skillet to medium-high and add one tablespoon of olive oil. Add chicken breasts and brown for about 3 -4 minutes per side. Using tongs, transfer the chicken breasts to the slow cooker.
    Alternatively, you can place chicken breasts in the middle in a single layer in the crockpot.
  • Then place diced red potatoes on one side of the chicken and the fresh green beans on the other side.
  • In a small bowl or glass measuring cup, combine the fresh lemon juice, olive oil, minced garlic, salt, pepper, oregano, onion powder, and garlic powder and whisk.
  • Pour over the chicken and vegetables. Cook on low for 4 - 6 hours till the chicken is cooked through and potatoes are fork-tender and the beans are tender-crisp.
  • If desired, you can shred the chicken. I like to leave it whole but it is very tender and most likely will fall apart while taking out of crockpot.

Notes

Tips
  • If you prefer, you can brown the chicken breasts in a skillet before adding to the slow cooker. This is an optional step.
  • Substitute the green beans for another favorite vegetable or add more potatoes.
  • You can skip the homemade dressing for this recipe and use one stick of melted butter with 2 packages of dry Italian seasoning dressing and a 1/4 cup of water. You will find this dressing next to the ranch seasoning packets in the salad dressing aisle in the grocery stores.
  • Make sure your potatoes are diced in even cuts so they are cooked evenly.
  • Keep the green beans whole if you prefer crisp beans, otherwise, you can cut them in half.
  • Adding a diced onion would be great in this recipe.
