Recently our neighbor had quite a lot of peanuts and asked if I wanted any.  I misunderstood him as asking, “do you want any roasted peanuts?”  – I was totally on board with this as I know my husband loves roasted nuts and boiled peanuts.  

My neighbor gave me a huge bagful and I quickly realized what he really asked was, “do you want any roasting peanuts?” These were raw in the shell and complete with the stems and leaves intact.  I was a bit excited now to roast them myself.

How to Roasted Raw Peanuts in the Shell

Start by preparing your raw peanuts which are also called goobers. Gently remove any stems and leaves. A few stems may remain, and that’s okay. Next, clean the nuts in a colander and rinse thoroughly under cool, running water. This crucial step eliminates surface dirt and impurities. Avoid prolonged soaking; a quick rinse is sufficient, removing any dirt or debris.

After rinsing, remove excess moisture by draining them and transferring to a clean kitchen towel. Pat them dry with another towel, leaving them slightly damp. This residual moisture helps the salt stick during the roasting process.

Preheat your oven to 350 degrees. Arrange the raw, in-shell nuts in a single layer on a shallow baking sheet, ensuring consistent heat distribution. Lightly season with sea salt or kosher salt, using about 1 to 2 teaspoons, depending on your preference. Evenly sprinkle the salt over them.

  • Place raw peanuts in the shell in a colander and rinse with cold water to remove dirt. A quick rinse is all they need. Drain and pour on to a towel and then pat dry with another towel. They will still be a bit damp.

  • Sprinkle with about 1 – 2 teaspoons of salt.
  • Roast in a 350 degree oven for 20 to 25 minutes for in-shell peanuts.
