Easy Air Fryer Blackberry Hand Pies #SummerDessertWeek

These Easy Air Fryer Blackberry Hand Pies are made using already made pie crusts with a homemade blackberry pie filling inside them. The hand pies are air fried which means they are ready fast without heating up your oven.

This mini handheld blackberry pie recipe couldn’t be simpler. I baked them in the air fryer, but you can easily bake them in the oven. Summertime in Georgia is hot hot hot, so I try not to turn on the oven, and that is where the air fryer is handy.

The filling for these pies uses fresh blackberries and white granulated sugar from Dixie Crystals Sugar. Dixie Crystals Sugar is a staple in my pantry. It is THE only sugar I use. Quality products are key to delicious baked goods.

Air Fryer Blackberry Hand Pies are quick to bake up and that makes them a great spur-of-the-moment summer dessert. Add a scoop of vanilla ice cream would be a great compliment to these blackberry pies. If you want to have two kinds of hand pies for your guests, try this air fryer apple pie.

How easy are these hand pies to make in the air fryer?

The hardest part (and it’s not even hard) to these hand pies is making the blackberry pie filling. You’ll use fresh blackberries, lemon juice, lemon zest, and sugar that you cook on the stovetop until it’s a thick fruity filling. No fresh fruit? Use frozen blackberries instead. You can even make the filling the day before and refrigerate it. Just let it come to room temperature before using.

Once the pie filling is cooled completely, you’ll use refrigerated pie dough and cut out your circles of dough, place blackberry pie filling and a small amount of cream cheese on the dough, fold over and crimp. Brush with an egg wash, sprinkle with coarse sugar, and place in the air fryer (this is the one I love to use).

Air Fryer Blackberry Hand Pie Ingredients

  • Blackberries
  • sugar
  • cornstarch
  • lemon
  • cream cheese
  • refrigerated pie crust dough
  • egg
  • coarse sugar
  • air fryer

Instructions for Making Blackberry Hand Pies

When making desserts that require the fresh fruit filling to be cooled before using in a recipe, I like to make that first. This way it will cool at room temperature while I am preparing the rest of the recipe.

If you do not have fresh blackberries, you can use frozen ones. No thawing necessary, just add a couple of minutes to the cooking time when cooking the pie filling.

I used premade pie crusts from the refrigerated section of the grocery store for convenience; but you can make your own homemade pie crust.

Step 1

Spray the air fryer basket with nonstick spray. Set aside.

Step 2

Add the blackberries and sugar to a medium saucepan and cook over medium heat. Cook the berries, mashing with a potato masher or the back of a spoon, until they start to break down and release their juices, about 2 – 3 minutes.

Step 3

Mix together the cornstarch and lemon juice in a small bowl. Add the cornstarch mixture and the lemon zest to the berries and stir until there are no more lumps. Continue to stir until the filling begins to thicken, 2 to 3 minutes. Remove from the heat, transfer to a bowl and let cool slightly.

Step 4

Roll one of the pie doughs out on a lightly floured surface until about 1/8-inch thick. Use a 5-inch round biscuit (this what I use) or cookie cutter, or the rim of a bowl, to cut out as many rounds as you can. Repeat with remaining dough round, gather the dough scraps and reroll as necessary to get 8 rounds.

Step 5

Place 1 small cube of room temperature cream cheese and 1 tablespoon of filling in the center of each dough round. Fold the dough over into a crescent and crimp the edges with a fork. Cut a couple of slits in the top of each pie for venting. Brush with beaten egg and sprinkle a bit of the coarse sugar over the pies.

Step 6

Place two of the pies in the basket of the air fryer. Cook at 375 degrees for about 8-10 minutes until golden brown, flipping the pies over about halfway through cooking time. Repeat until all pies are baked. Serve warm. Note: cooking time depends on the size of your air fryer and how many you can make at one time.

Preheat oven to 375 degrees. Line baking sheet with parchment paper. Prepare the pies as above except place prepared pies on baking sheet. Bake until the pies are golden brown, 15 to 20 minutes.

Tips Tricks and FAQs

  • No fresh blackberries, use frozen and add a couple of minutes to cooking the fruit pie filling.
  • Easily can change out the blackberries for another fruit. Try blueberries, raspberries, strawberries, or a mix.
  • Can be baked in oven instead of the air fryer.
  • Add a glaze to the pies instead of topping with the coarse sugar.
  • Make your own pie crust if you don’t want to use an already made one.
